Organic Red Cabbage Seed
Mustard seed can be used for various purposes. The seed can be used as a spice or for making vinegar. You can also allow it to sprout, creating a spicy sprout vegetable. Delicious in a salad, or combined with other bread spreads.

Usage
1. Place one or two tablespoons of seeds in a jar and add plenty of lukewarm water. [Any glass jar is suitable, provided it is large enough (min. 1½ liters) and the neck does not narrow too much.]

2. Secure a sturdy (postman) rubber band around a plastic or fiberglass mesh over the jar. Preferably do not use aluminum mesh as it may be treated against insects.

3. After the specified soaking time¹, drain the water, rinse the seeds, and drain the water again.

4. Place the jar tilted upside down at room temperature in a colander, rack, or tray so that excess water can drain away.

[It is important that all water can drain away; the water that remains with the sprouts is sufficient to keep the sprouting process going. It is also important that the seeds/sprouts do not cover the entire mesh. For a good result, it is crucial that there is enough air supply. Therefore, after each rinse, spread the seeds/sprouts evenly along the length of the jar.]
Do not place the jar with seeds/sprouts on the heater or in full sunlight!

5. Rinse the seeds/sprouts about 3 times a day during the specified growing period² and then always store the jar tilted upside down.

6. After the final rinse*, let the sprouts in the jar (tilted upside down) grow dry at room temperature for at least 18 hours before consuming and/or refrigerating.

* If desired, the final rinse can be replaced by a 'washing procedure' to remove pellets:
- Fill a basin or similar container to the rim with lukewarm water.
- Place the sprouts in it and 'wash' them loose.
- Remove the pellets by waving them over the edge of the basin.
- Scoop the sprouts out of the water by hand and return them to the jar.
- Secure the mesh again, place the jar tilted upside down, and let it dry at room temperature for at least 18 hours.

Store leftover sprouts chilled (max. 7°C) and covered (not airtight).
